Ingredients

For 4 servings

  • 500 ml water
  • 4 cm piece of fresh ginger, sliced or crushed
  • 6 green cardamom pods, lightly crushed
  • 1 cinnamon stick
  • 4 whole cloves
  • 6 black peppercorns
  • 3 tbsp loose black tea (Assam is ideal) or 4 tea bags
  • 500 ml whole milk
  • 3 to 4 tbsp sugar, or to taste

Step by step

  1. Step 1: Pour the water into a saucepan and add the ginger, cardamom, cinnamon, cloves and peppercorns.

  2. Step 2: Bring to a boil, then simmer for 5 minutes so the spices release their flavor.

  3. Step 3: Add the tea and simmer for 2 minutes until the color is deep and dark.

  4. Step 4: Pour in the milk, add the sugar and bring it back up to a gentle boil. Watch carefully, because milk can boil over quickly.

  5. Step 5: Let it bubble for 1 to 2 minutes, then taste and add more sugar if you like.

  6. Step 6: Strain into cups or a teapot and serve hot.
