Ingredients
For 8 servings
- 10 garlic cloves, peeled
- 1 tsp salt
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 120 ml fresh orange juice
- 60 ml fresh lime juice
- 120 ml olive oil
- Small handful of fresh cilantro or parsley, chopped (optional)
Step by step
Step 1: Crush the garlic with the salt in a mortar and pestle, or chop it very finely and mash it with the flat of a knife, until it forms a paste.
Step 2: Stir the cumin, oregano and black pepper into the garlic paste.
Step 3: Mix the paste with the orange and lime juice in a heatproof bowl.
Step 4: Warm the olive oil in a small pan over medium heat for 2 to 3 minutes, until hot but not smoking.
Step 5: Carefully pour the hot oil over the citrus mixture. It will sizzle, so stand back, then stir well.
Step 6: Let it cool, stir in the herbs if using and pour into a jar. Keep in the fridge for up to 1 week and shake before using.
