A stack of golden French toast with berries, honey and powdered sugar

Pain Perdu (French Toast)

From France

The French way to rescue yesterday's bread: thick slices soaked in vanilla custard and fried in butter until golden and crisp. The name means 'lost bread', but nobody ever leaves any behind.

Ingredients

For 4 servings

  • 8 thick slices of day-old brioche or white bread
  • 3 large eggs
  • 250 ml (1 cup) whole milk
  • 2 tbsp sugar, plus extra for sprinkling
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Pinch of salt
  • 3 tbsp butter
  • Fresh berries and powdered sugar or maple syrup, to serve

Step by step

  1. Step 1: Whisk the eggs, milk, sugar, vanilla, cinnamon and salt in a wide, shallow dish.

  2. Step 2: Melt 1 tbsp of the butter in a large frying pan over medium heat.

  3. Step 3: Dip each slice of bread into the egg mixture for about 10 seconds per side, so it soaks up the custard without falling apart.

  4. Step 4: Fry the slices in batches for 2 to 3 minutes on each side until deep golden, adding a little more butter to the pan for each batch.

  5. Step 5: For an extra crunch, sprinkle a little sugar over each slice during the last minute and flip once more so it caramelizes.

  6. Step 6: Serve hot with berries and a dusting of powdered sugar or a drizzle of maple syrup.
